Prof. Dolores O’Riordan

Professor Dolores O’Riordan is a Full Professor of Food Science, the Director of UCD’s Institute of Food and Health and UCD’s Vice President for Global Engagement. Her research focuses on the physico-chemical properties of food ingredients and food structures that enhance health benefits.

Over 25 years in academia, Prof. O’Riordan has extensive experience of organising conferences, international summer schools and workshops. Most recently she organised the World University Networks annual conference (2019) with over 250 delegates (topics – health, climate change, and education). She played a key local organising role when the EFFoST annual conference and the IUFOST World Congress were held in Dublin in 2010 and 2016 respectively. More recently she acted on the scientific committee of the annual EFFoST conferences (2020,2021). Prof. O’Riordan has active global partnerships and holds appointments on several national and European committees/boards providing an extensive network.
